The glazed meat will begin to break open when it is close to ready.
130 F. to 140 degrees will be the final inside temp. of the meat.

The last flip of the rack, pour the last of the marinade.
Close the lid and cook for about 5-7 more minutes.
Total grill time is 30 to 40 minutes.

8 smooth cuts provides 9 petite chops that are succulent and quite filling.

45 Minutes to an hour out on the grill.
8 Smooth cuts with a saw/knife gives you 9 thick chops.

130-140 degree final temp of the inside of the rack.
Let the meat sit for 10 minutes then cut.
The meat is very tender.

The Antelope Rack is larger than the Fallow Venison.
Once you try these, you will be hooked.
One Chop with your meal, you can serve 4-6 hungry people real nice.
